

Is it just me or does it seem to like bananas ripen overnight? The only solution to this problem is to use those extra ripe bananas and make some banana bread. This recipe is a twist on the classic and skips the nuts altogether. Nothing against nuts but the richness of semi-sweet chocolate morsels is just too enticing. To add just a little more indulgence why not add some creamy peanut butter to the mix. This addition makes the bread extra moist and possibly sinful.
RECIPE:
1/2 cup butter
2 eggs
1 cup sugar
1/2 cup peanut butter
1/4 cup chocolate chips
1 1/2 cup self-rising flour
pinch of salt
3 ripe bananas (crushed)
METHOD:
1. Cream butter, sugar, and eggs together using a mixer or by hand for 2 minutes. Add peanut butter and stir until combined.
2. Add sifted dry ingredients and mix well. Stir in crushed bananas and chocolate chips.
3. Pour in a greased and floured loaf pan. Bake in a 350° oven for 40-50 minutes.
Delicious sandwiches can be made by spreading cream cheese that has been moistened with a little cream on cold, thin slices of banana bread.
