Poblano Cheese Quesadillas

Quesadilla may be my middle name. I mean they are just the perfect answer to fill up some boozy party guests or a quick weeknight meal. Upgrade your quesadilla game by using Pimento Cheese or better yet, Poblano Cheese instead. Consider making minis for parties and serving them up in holders made of lime wedges…Continue Reading “Poblano Cheese Quesadillas” →

Spicy Poblano Cheese

Spicy Poblano Cheese

Pimento cheese is an undisputed Southern staple. And a must on menus for any gathering from showers to fiestas. Yes, I said fiesta. But, Pimento Cheese is a tad boring and sometimes flavorless. My dear friend Lori, the Salsa Senorita, totally agrees. So we set out to recreate a flavor filled, pack-a-punch spread that will…Continue Reading “Spicy Poblano Cheese” →

Juleps

Nothing beats a twist on an old classic, and these Cilantro Lime Juleps are no exceptions. Since Cinco de Mayo and The Derby are so close this year, why not add a bit of flare to the old stand-by. A cilantro infused simple syrup adds a cool, thirst-quenching vibe and is a nice compliment to…Continue Reading “Cilantro Lime Juleps” →

Open-Face Chicken Tortas

Let me begin by saying that any holiday that promotes tequila drinking and incredibly lively music is something I totally embrace. Cinco de Mayo is most certainly that day. As with any holiday, a well-laden spread of bold, flavorful food is a must have. This year, I’m skipping the tacos, the enchiladas, the tamales, and…Continue Reading “Open-Face Chicken Tortas” →

Stuffed Sweet Potatoes

Categories FOOD

I cook with sweet potatoes all the time. I love them just about any way you can throw them at me. Baked sweet potatoes are a superfood side dish that compliments any meal, but sometimes just gets tossed to the side. Why not make it the star by stuffing it with a satisfying mix of…Continue Reading “Stuffed Sweet Potatoes” →

Banana Rum Bread

Banana Bread

Is it just me or does it seem like bananas ripen overnight? The only solution to this problem is to use those extra ripe bananas and make some banana bread. This recipe is a twist on the classic and skips the nuts altogether. Nothing against nuts, but the bold, spicy flavor of rum is just…Continue Reading “Banana Rum Bread” →

In need of a last minute or spur-of-the-moment frosting? This easiest of easy Peanut Butter Frosting is the ticket. Transform banana muffins into a suburb cupcake or make a light, fluffy topping for brownies in a snap. I prefer to use the Creamy Honey Roast Peanut Butter from Peter Pan. Birds Nest

A boring dessert is for the birds. For your next Spring party, create a mini butterscotch birds nest, laden with delicate cake eggs that are chocolate covered in just the right shade of Robin’s Egg Blue. Since most of the components are pre-packaged, whipping them up is a cinch. Which leaves plenty of time for…Continue Reading “Butterscotch Bird’s Nest” →

Turnip Greens

Lucky for me a random patch of turnip greens seeded themselves in a cozy little corner of my garden. It would be an absolute shame if I didn’t whip them up, and share the recipe with y’all. Unlike the mushy, cooked-to-death turnip greens boiled in water, my seared greens have all of the rich, earthy…Continue Reading “Seared Turnip Greens” →

Shepherds Pie

Let’s be honest. Everything is just way damn cuter when it’s mini. Well, at least most things. So a little minute version of a Shepherd’s pie is just irresistible. Perfectly portioned sizes are ideal for parties or weeknight dinners alike. The addition of a golden crust is just ideal for adding that bit of crisp…Continue Reading “Mini Shepherd’s Pie” →
